We had Pumpkin Pancakes w/ ButterCream Syrup for breakfast. Lunch time offered us fresh Autumn harvested fruits and veggies and Apple Muffins. And for dinner, the grand finale: Golden Autumn Stew and Buttermilk Biscuits.
Now, this stew is the miracle stew. Certain grown men who don't eat certain vegetables or cooked fruit eat this stew! Except for my children last night, I've never received one complaint. ;)
Golden Autumn Stew
2 cups cubed Yukon gold potatoes
2 cups cubed sweet potatoes
2 cups cubed butternut squash
1 cup diced carrots
1 cup sliced celery
2 lb. smoked sausage
2 cups apple cider
salt & pepper to taste
1) Combine vegetables in Crock Pot; toss w/ salt and pepper according to your taste.
2) Place rings of sausage on top. Do NOT slice until end of cooking time.
3) Add apple cider.
4) Cover. Cook on high 2 hours, then low for 4 hours, or until veggies are tender. Do not stir.
5) To serve, remove sausage rings and slice. If you want, put veggies in serving bowl w/ sausage on top. (You can also take the sausage down to 1 lb., but we like meat.)
6) Enjoy w/ hot biscuits!
